Homemade - Lemon Squares

Date: May 22, 2012

Ingredients:
Crust:
30g Sugar
60g Salted butter
3/4 cup flour

Lemon top:
2 eggs
1/4 cup sugar
1/4 cup lemon juice
1/8 cup flour
1/4 teaspoon baking powder

Formula to crumbly crust
1. Preheat oven to 180C
2. Beat butter and sugar until a pale creamy texture, then combine flour into mixture
3. Press the crumbles into the pan and bake until firm (around 30 minutes)

A continued journey to the lemony delight:
4. Beat eggs and sugar until light and fluffy
5. Mix the lemon juice into egg mixture
6. Sift the flour and baking powder
7. Combine the egg and flour mixtures
8. Pour the liquid over the baked crust and bake until firm (about 25 minutes)

Lemon Squares
The lemon squares turned out to have a nice acidity without an overwhelming amount of sweetness like usual lemon toppings. The crust was also surprisingly crumbly, though I would've liked it to be a little firmer. I guess that there is always room for improvement :)

This dessert might seem hard to replicate at first sight, but just because there are many parts of it doesn't mean that it's difficult. It's actually rather easy so bake away~

a bit of a warning: remember that the pan is still very hot when you are about to place it back into the oven the second time. Stupid me completely forgot and held the pan with my bare hands. It was a dumb move that resulted in a few weeks of burnt thumbs and index fingers.
